On a weekend when other kitchen classrooms at the Culinary Institute of America are packed with adults preparing paella and green mango salad, Chef Greg Zifchak is teaching Chicken Roasting 101.

The breakdown of the traditional family has contributed greatly to this. All of these latchkey kids grown up and do not know how to cook and I am one of them.
It is very easy to not even care about cooking. Restaurants being everywhere and a large assortment of microwavable meals available, it is no wonder in this hectic world people do not cook more, at least here in the US.
This week I am on vacation and decided to learn to make a couple more dishes, since my cooking skills are not that great.
Last night I made real mashed potatoes. That isn’t a big deal to some, but it’s the first time I have EVER made them. Turned out pretty decent.
Twenty years ago food at McDonalds was less healthy than it is today.
People can blame McDonalds all they want about their food being unhealthy. But the problem is not with McDonald’s food, but with peoples eating habits and lack of exercise.

It is up to us as mothers to teach our kids the art of cooking. My son, now 14 is a great cook, makes a variety of dishes from coconut rice, fired rice to beef stew and curry chicken as well as omlettes and steamed cabbage.
My 12 year old daughter is great at African and Carribean dishes including plantains while my 7 year old made a pineapple upside down for Christmas and earned great reviews. They have learnt to cook form helping me over time and wheneverthey cook for our guests they feel proud and the accolades they get have served to make them more confident and also to ttake pride in cooking.
They are now taking recipes form cooking books and trying to cook dishes from other parts of the world for fun. They especially love recipes from Africa and they Caribbean. They also have fun making dishes from countries that represent their freinds and surprising them either when they come for dinner or for covered dish parties.

I believe there are many ways to teach our kids to cook even though we must balance our working lives with our free time.
They value the lessons learnt, they eat health and knowledge once learnt is never wasted.

Make the learning experience fun though and you will all enjoy it.
    Happy snacking…
    Zidzi
